What is needed

With foodFalafel with yoghurt and mint
Ingredients
- 300 grams of dried chickpeas, soaked overnight
- 1 onion
- 2 cloves garlic
- 1 bunch of parsley
- 2 teaspoons of cumin
- 300 grams Greek yoghurt
- 1 bunch of mint
- 4 pita breads
- oil for deep-frying
Method
- Drain the soaked chickpeas well and pat them dry.
- Blend them with onion, garlic, parsley, cumin and salt in the food processor into a coarse mixture that holds together.
- Shape into balls and deep-fry them in batches for 3 to 4 minutes at 175 °C until golden brown.
- Finely chop the mint and stir it into the Greek yoghurt with a pinch of salt.
- Warm the pitta breads and serve them with the falafel and the mint yoghurt.

Ingredients
- 160 grams young Gouda
Method
- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.

Ingredients
- 12 bitterballen
- mustard
Method
- Heat the frying oil to 180 °C.
- Fry the bitterballen for 4 to 5 minutes until golden brown and piping hot all the way through.
- Drain on kitchen paper and serve immediately with mustard.
