Chapter 01 · What you taste

Colour comes from the skin

Wine is fermented grape juice, and almost all grapes have white juice. The colour comes from the skin: if it ferments along, the wine turns red; a few hours gives rosé. Dry or sweet is about the sugar left after fermentation, not about fruit. A wine can be full of fruit and still bone dry.

Red, white, rosé and bubbles

Champagne gets its bubbles from a second fermentation in the bottle, in that one French region. Cava is made the same way in Spain. Prosecco ferments a second time in a sealed tank and gives a looser, fruitier mousse. Rosé comes from black grapes with brief skin contact. Dessert wine is sweet thanks to dried, frozen or late-harvested grapes.

From chardonnay to tempranillo

A French label usually shows the region, outside Europe the grape. Red burgundy is pinot noir, chablis is chardonnay. The same variety tastes different from place to place: chardonnay from Chablis is taut and mineral, from a warm area fuller and riper. Soil, climate and the choice of oak or steel matter just as much as the grape.

Region on the label, or grape

In France, Italy and Spain the region on the label says more than the country: bordeaux, chianti, rioja. In Argentina, Chile, South Africa, Australia and the United States the grape comes first. Germany, Austria and the Netherlands also have their own regions and their own rules.

Dry, medium-sweet or truly sweet

The sugar left after fermentation determines whether a wine is dry or sweet. Ripe fruit and high alcohol can make a dry wine smell sweet; acidity makes a wine with some residual sugar feel dry. Looking for a wine to go with a dish? Feel free to ask in the shop; we are happy to help you choose.

Do you also sell wine by the case?

For many wines, yes. Just call with the wine and the quantity, and we will check what is in stock and what can be ordered in.

Can I reserve a bottle and collect it in Bathmen?

Certainly. Call 0570 541 278 or email info@bockje.nl, and it will be ready for you at Brink 2 in Bathmen.

Do you also ship?

Yes, within the Netherlands and to about forty countries. Orders go through the online shop; feel free to call us with any questions about shipping.
