Chapter 01 · What it is

Zero point zero is not the same as alcohol-free

There are two routes to a bottle without alcohol: stopping fermentation early or using a yeast that barely produces alcohol, or removing the alcohol afterwards, under reduced pressure or through a membrane. Zero point zero and alcohol-free are not the same. In the Netherlands, at most 0.1 per cent by volume counts as alcohol-free, and up to 1.2 per cent as low-alcohol. The label says which of the two.

Chapter 02 · Beer

The alcohol-free beer shelf

Alcohol-free beer is specially brewed, with a yeast that barely converts the sugars or with fermentation stopped early, or it is simply beer from which the alcohol has been removed afterwards. The latter costs flavour; brewers make up for it with more hops or a second fermentation in the bottle. Pilsner, witbier, weizen, IPA and radler are all on the shelf. Serve cold, not ice-cold.

Chapter 03 · Wine

White, red, rosé and sparkling

Alcohol-free wine starts out as ordinary wine; only afterwards is the alcohol removed, under reduced pressure, so that as much of the aroma as possible is kept. Without alcohol there is less body, and producers make up for that with a little grape juice or carbonation. That is why sparkling often works best: the bubbles take over the role of the alcohol. Serve chilled, in an ordinary wine glass.

Chapter 04 · Mocktails

Ready mixed: open the bottle or can

A mocktail is a mixed drink without alcohol, ready-made in a bottle or can: mojito, spritz, daiquiri, martini, paloma. Nothing to measure, nothing to shake. Mixing your own? Bitter and sour take over the role of the alcohol: tonic, lemon, grapefruit, an alcohol-free bitter or strong tea. Ice to the brim, and adjust the sweetness with syrup.

Chapter 05 · Aperitif

Aperitif hour, without the alcohol

An aperitif is bitter, herbal and light, meant for before a meal. Without alcohol, the same herbs are steeped in water or juice, then sweetened and balanced with acidity. The bitterness is the hardest part to recreate, and exactly what it is all about. Pour over ice, with tonic or sparkling water and a strip of citrus peel.

Chapter 06 · Gin

Gin without alcohol, and gin and tonic in miniature

Gin owes its flavour to botanicals: juniper first, with coriander, angelica and citrus peel. Without alcohol, these are steeped in water or distilled at low pressure. The result is thinner than gin and calls for a robust tonic. Legally, such a bottle may not be called gin; the label will then say something like alcohol-free distillate.

Why here

Alcohol-free on the Brink

The alcohol-free shelf has eight sections, the same as in the online shop: beer, wine, mocktails, aperitif, gin, liqueur, syrup and bitter. That way the alcohol-free beer does not end up among the syrups.

Every bottle on this page also appears on one of the eight pages below it.

Alcohol-free has its own section: brands that make only alcohol-free drinks, alongside brewers and houses with an alcohol-free version of their own bottle.

The label determines the category. 0.0 per cent and ‘alcohol-free’ are not the same: for alcohol-free, the law allows a small residual percentage. What is on the bottle is also in the list.
