No idea which bottle yet?

The help from the shop, but online. A few short questions about taste, and the assistant finds the beer or wine to match.

Chapter 01 · Whisky

Smoke and cask make the whisky

Whisky is distilled grain that matures for years in oak. The taste depends mainly on two things: smoke, if the barley was dried over a peat fire, and the cask. A sherry cask gives dark fruit, a bourbon cask vanilla and coconut. Looking for a first bottle? Then first choose between smoky and not smoky.

Chapter 02 · Beer

Yeast determines the character

Beer is water, malt, hops and yeast, and the yeast sets the main direction. Top fermentation gives ales, tripels and stouts, with fruit and spice. Bottom fermentation gives pilsners and bocks, cleaner and drier. Lambic and gueuze ferment spontaneously, with wild yeasts from the air. The gifts are ready-made packages, for anyone who wants to taste without choosing themselves.

Chapter 03 · Wine

Colour, grape and origin

Wine starts with the grape and the place where it grows. Red gets its colour and tannin from the skins, white usually ferments without the skins and stays fresher, rosé sits in between. Sparkling wine owes its bubbles to a second fermentation. On the wine page, choosing therefore goes by colour and then by country: together, those two say the most about what ends up in the glass.

Chapter 04 · Spirits

Distilling, botanicals and ageing

Gin is neutral alcohol with juniper and other botanicals; jenever owes its full character to malt wine. Rum comes from sugar cane or molasses. Cognac and armagnac are distilled wine, calvados is distilled cider, tequila and mezcal come from agave, and vodka stays as neutral as possible. Torn between two bottles? Chapter 05 · Aperitifs and specialities

Liqueur, port and fortified wine

Drinks for before or after dinner. Liqueur is spirit with sugar and flavour: fruit, herbs, nuts, coffee or cream. Port, sherry and madeira are fortified wines; the earlier the fermentation stops, the sweeter the wine. Vermouth is wine infused with wormwood and herbs. Ruby port stays young and fruity, tawny matures longer in wood and moves towards nuts and caramel.

Chapter 06 · Alcohol-free drinks

Alcohol-free has a section of its own

With beer, fermentation is stopped early, or the alcohol is removed after brewing. With wine, the alcohol is also removed afterwards, often with some grape juice added back for body. Alcohol-free gin and aperitifs are built from botanicals in water, without distilling: rarely like the original, but herbal and dry. The shelf is divided into beer, wine, gin, liqueur, aperitif, bitters, mocktails and syrup.

Chapter 07 · Other

The glass plays its part

This is where the glassware is, along with everything else that goes with pouring. A tulip-shaped nosing glass concentrates the aroma and is therefore used for whisky, rum and cognac. A tumbler is wide and leaves room for ice. Beer glasses vary by style; wine glasses are roomier the more air the wine needs. Also: measures, carafes, coolers and gift packaging.
