Chapter 01 · What you taste
Yeast matters more than colour
Beer is water, malt, hops and yeast. The yeast sets the main direction: bottom-fermenting gives pils and lager, top-fermenting the Belgian and English styles, spicier and fruitier. Dark comes from roasted malt and says nothing about strength. Hops give bitterness and aroma; when the brewer adds them determines what comes through most.
Chapter 02 · The styles
What a style name means
A tripel is not brewed three times and a dubbel is not brewed twice: the names come from the abbey tradition and mainly say something about strength. Trappist is an origin: brewed within the walls of a Trappist abbey. IPA is top-fermented with the hops up front; pils is bottom-fermented and named after Pilsen.
Chapter 03 · The neighbours
Belgian and Dutch side by side
Belgium brings abbey and Trappist beer, strong blondes and lambic from the Pajottenland, spontaneously fermented with wild yeast from the open air. For a long time the Netherlands mainly knew pils, until small breweries took up Belgian and American styles. Germany keeps to its own line: weizen, kölsch, altbier and bock, beer driven by malt and fermentation more than by hops.
Chapter 04 · Alcohol-free
Alcohol-free is rarely zero
In the Netherlands, alcohol-free beer may contain at most 0.1 per cent alcohol; from Belgium and Germany it may be up to 0.5 per cent. So it is rarely exactly zero. The alcohol is either removed afterwards, with heat or a membrane, or the fermentation is held back. The first costs some aroma, the second leaves more malt sweetness. The range now runs from pils to weizen, IPA and stout.
Chapter 05 · Bottle size
Why bottle size matters
Most craft beer comes in 33 cl: finished in one go, so the beer stays at the right temperature. The large 75 cl corked bottle comes from Belgium and is for sharing. There is a thin layer of yeast at the bottom, so pour slowly in one movement. Larger formats and packages are mainly there to give away.
The family tree of beer
Every style has a place in the tree
Above ground the top-fermented beers, below it the bottom-fermented ones. Click a style to see which beers of that style are on the shelf.
Top-fermented (ale)The yeast works at the top, at 15 to 24 °C. Often fruitier and fuller.
Bottom-fermented (lager)The yeast works at the bottom, at 7 to 13 °C. Cleaner and crisper.
Dotted lineHas features of both, such as top-fermented and cold-conditioned.
Hop cones and bubblesMore hop cones: hoppier. More bubbles: more fizz. Indication per style, based on the BJCP style guide.
