Blanco, reposado or añejo?

Tequila is made from blue agave, a succulent that needs seven years or more to mature. The designation on the bottle tells you how long the spirit then spent in oak.
Blanco goes into the bottle almost immediately: clear, vegetal and peppery, and the best choice for a margarita. Reposado rests two months to a year in cask and becomes softer, with vanilla. Añejo spends at least a year in cask and heads towards whisky. That one is served neat.
Look for the words 100% agave. If they are missing, up to almost half of the sugars may come from something else, and you can taste it.
If the bottle does not say 100% agave, up to almost half of it can be other sugars.

Why do some bottles say 100% agave?
Because only those are made entirely from blue agave. With the rest, part of the sugars may come from elsewhere.
