Ingredients

  • 200 grams smoked salmon
  • 1 bunch of dill
  • 100 grams crème fraîche
  • 8 small toasts

Method

  1. Finely chop the dill and stir half of it into the crème fraîche with a little pepper.
  2. Spread the toasts with the crème fraîche.
  3. Top with a piece of smoked salmon and garnish with the rest of the dill.
White fish ceviche with limeWith the mealWhite fish ceviche with lime

Ingredients

  • 500 grams of fresh white fish
  • 4 limes
  • 1 red onion
  • 1 red chilli
  • 1 bunch of coriander
  • 1 avocado
  • sea salt

Method

  1. Cut the very fresh fish into cubes of about 1.5 cm and keep it cold.
  2. Squeeze the limes, cut the red onion into thin half rings and finely chop the red chilli.
  3. Mix the fish with lime juice, onion, chilli and sea salt and chill for 10 to 15 minutes, until the fish turns white.
  4. Dice the avocado and roughly chop the coriander.
  5. Gently fold in the avocado and coriander and serve cold straight away.

Ingredients

  • 160 grams of mozzarella di bufala

Method

  1. Take the mozzarella out of the fridge half an hour before serving.
  2. Tear it into pieces and serve immediately.
