Chapter 01 · What you taste

Juniper comes first

Gin is neutral alcohol with botanicals, and juniper must be the dominant note; otherwise it is not gin. Alongside it go coriander, angelica, citrus peel, cardamom and dozens of other botanicals, each house with its own proportions. Gin is not jenever: jenever has malt wine as its base and therefore tastes of grain.

Chapter 02 · London dry

London dry is a method

London dry says nothing about the place, but everything about the method: all the flavour comes from the distillation itself, and afterwards only water and a very small amount of sugar may be added. Colourings and flavourings are excluded. So a London dry can just as well come from Spain, Scotland or Twente.

Chapter 03 · Modern botanical

Flowers, herbs and citrus

Alongside the classic style there is a more modern corner with flowers, tea, cucumber, rhubarb or hay. Citrus is a group of its own, from orange and grapefruit peel to yuzu and lime. The juniper is still there; it just gets company. Delicate botanicals are often distilled separately, as they would otherwise be lost in the still.

Chapter 04 · The countries

England, the Netherlands and Scotland

England gave gin its name and its dry style, but the juniper spirit came from the Low Countries: here it was jenever first. Scottish gin often comes from houses that also distil whisky. Italy and Spain bring Mediterranean botanicals, from rosemary to olive. The country on the label is the address of the distillery, not always the origin of the botanicals.

Briefly explained

What makes a gin a gin?

  • The terms
  • JuniperThe only compulsory ingredient.
  • London dryAll flavour during distillation, nothing afterwards.
  • Distilled ginMay add flavour afterwards.
  • Old tomSlightly sweeter, historical style.

Gin is neutral alcohol in which botanicals have been steeped, with one compulsory ingredient: juniper. Without juniper it is not gin. Everything else (coriander, citrus peel, angelica, cucumber, rose petal) is a free choice, and that is where two bottles differ.

London dry is not an origin but a method: all the flavour must be captured during distillation and nothing may be added afterwards. So a london dry can perfectly well come from Twente.

And its origin is Dutch: English soldiers got to know our jenever during the wars in the Low Countries, took it home and turned it into gin. Hence the expression Dutch courage.

Without juniper it is not gin. Everything else is the maker's free choice.

Frequently asked questions

About our gin range

How much gin does ’t Bockje have?

On 24 October 2026 there are 255, from 98 brands. That figure comes straight from our stock and changes weekly; new bottles are added regularly.

What does london dry mean?

That all the flavour is captured during distillation and nothing may be added afterwards. It is a method, not an origin: a london dry can come from the Netherlands.

What must gin contain?

Juniper. Without juniper it is not gin. All other botanicals are the maker's free choice.

What is the difference between gin and jenever?

Jenever has a grain base of malt wine and is fuller and grainy; gin has a neutral base, so the botanicals come through more sharply. Gin grew out of jenever.

Which tonic goes with which gin?

That depends on the botanicals: a neutral tonic with a citrus-led gin, a drier one with a herbal gin. Call us and tell us which gin you have, and we will help you choose.

Does ’t Bockje ship gin abroad?

Yes, to about forty countries. Email info@bockje.nl if you would like to know whether your country is included.
