Grappa: what is left after the wine

- Italycountry of origin
Grappa is not distilled from wine but from what remains after pressing: skins, seeds and stalks, together the vinaccia. It was once the drink of the farmer who did not want to throw anything away; today there are grappas that can rival a good cognac.
Young grappa is clear and robust, with a pronounced grape flavour. If it matures in oak, it is called invecchiata or riserva and becomes amber-coloured and softer.
Serve young grappa chilled in a small tulip glass, and aged grappa at room temperature.
Grappa comes from skins and seeds: what is left after the grapes have been pressed.
