Chapter 01 · What you taste

What is left after pressing

Grappa is distilled from vinaccia: the skins, pips and stalks left over after pressing the grapes, so not from wine. And grappa is not always rough: some has spent years on oak and is amber-coloured. The name is protected for distillate from Italy, Italian Switzerland and San Marino, made from Italian grape pomace.

Chapter 02 · Cask-aged

Invecchiata: the aged side

Invecchiata means aged. The grappa goes into wood, often oak, sometimes a cask that previously held barolo, sherry or bourbon, and gains colour and roundness. From twelve months invecchiata may appear on the label, from eighteen months riserva or stravecchia. The wood tempers the sharp, floral side and brings vanilla and nut.

Chapter 03 · From a single grape

Moscato, chardonnay, nebbiolo

Some houses distil the pomace of a single grape variety separately; the grape is then named on the label and it is called monovitigno. Moscato gives a floral, grapey grappa, chardonnay a softer one and nebbiolo a robust one with more spice. This way you can taste the difference between the varieties without wood getting in the way.

Chapter 04 · Unaged

Giovane: clear, straight from the still

Giovane, also called bianca, is bottled without wood and stays colourless. This is how grappa is served in Italy after a meal: cool, in a small glass. Everything from the pomace is there, unmasked, in the glass: flowers, green apple, sometimes something spicy or peppery. Resting in steel makes it rounder, without colour.

Chapter 05 · Strength

Strength and size of grappa

Grappa has at least 37.5 percent alcohol and is usually bottled at around forty, unaged bottles from small distilleries sometimes higher. There is also a smaller size, from thirty-five to sixty centilitres. Giovane goes into the glass lightly chilled, invecchiata at room temperature; cold is exactly what makes the wood disappear.

Why here

Grappa from a wine and spirits merchant who knows the shelf

Grappa is distilled from what is left after pressing grapes: skins, pips and stalks. Once the drink of the thrifty farmer, nowadays also made to a high standard.

This page lists every brand we stock, followed by the number of bottles. Click on a name for that brand's page.

Grappa: what is left after the wine

  • In brief

Grappa is not distilled from wine but from what remains after pressing: skins, seeds and stalks, together the vinaccia. It was once the drink of the farmer who did not want to throw anything away; today there are grappas that can rival a good cognac.

Young grappa is clear and robust, with a pronounced grape flavour. If it matures in oak, it is called invecchiata or riserva and becomes amber-coloured and softer.

Serve young grappa chilled in a small tulip glass, and aged grappa at room temperature.

Grappa comes from skins and seeds: what is left after the grapes have been pressed.
