Jenever op eikenhout

Een deel van de jenever gaat na het stoken op eikenhouten vaten, net als whisky. Op het etiket staat dan hoeveel jaar: drie, vijf, tien of soms twintig.
Dat hout doet met jenever hetzelfde als met whisky: de scherpe kanten worden ronder en er komt vanille, karamel en houtkruidigheid bij. De granige basis van de moutwijn blijft er wel doorheen te proeven, en dat maakt gerijpte jenever tot iets eigens, niet zomaar een Nederlandse whisky.
Schenk hem puur, op kamertemperatuur, in een tulpglas in plaats van een borrelglaasje.
Gerijpte jenever is geen whisky, maar wie whisky drinkt herkent er meteen iets in.

What is the difference between jonge and old jenever?
That is not about age but about the recipe. Oude jenever has more malt wine and is fuller and grainier; jonge jenever has a more neutral base and is lighter and drier.
How do you serve jenever?
At cellar temperature in a tulip glass rather than ice-cold from a traditional jenever shot glass. Then you taste the grain and the botanicals.
