With drinksBlinis with smoked salmon and crème fraîche
Ingredients
- 16 blinis
- 200 grams smoked salmon
- 125 millilitres of crème fraîche
- 1 bunch of dill
- 1 lemon
Method
- Warm the blinis for 3 to 4 minutes in an oven at 180 °C or briefly in a dry frying pan.
- Finely chop the dill and stir half of it, with a little lemon zest, into the crème fraîche.
- Top each blini with a dollop of crème fraîche and a little smoked salmon.
- Garnish with the rest of the dill and serve with lemon wedges.
With the mealOysters au naturel with lemon
Ingredients
- 24 oysters
- 2 lemons
- 1 shallot
- 2 tablespoons of red wine vinegar
- freshly ground black pepper
Method
- Chop the shallot very finely and mix it with the red wine vinegar and freshly ground black pepper.
- Open the oysters with an oyster knife, leave the liquid in the shell and remove any loose bits of shell.
- Lay the well-chilled oysters on a platter and serve with lemon wedges and the shallot vinegar alongside.
With dessertCitrus fruit sorbet
Ingredients
- 500 millilitres of lemon or orange sorbet
- 2 oranges
- 4 sprigs of mint
Method
- Put the coupes in the freezer for 15 minutes.
- Peel the oranges with a knife so that the pith also comes off, and cut the segments out from between the membranes.
- Scoop balls of sorbet into the cold coupes, place the segments alongside and garnish with mint.
