These are the X-Mas Quad BA 2023, an 11% quadrupel from Denmark, and the To Øld Fashioned, an 8.5% bock that To Øl brewed together with Jopen in Haarlem. The second is therefore listed under the Netherlands as country of origin; the name To Øl is on it, though.

To Øl started in 2010 in Copenhagen. Tore Gynther and Tobias Emil Jensen knew each other from school in Nørrebro, where they brewed their first beer in the school kitchen outside lesson hours. Their teacher was Mikkel Borg Bjergsø, who later started Mikkeller himself. The name comes from their first names; in Danish, ‘to øl’ also simply means two beers.
For years they brewed without a brewery of their own. Such a brewer is called a gypsy brewer: you rent time and kettles at an existing brewery and bring your own recipe. For To Øl, that was mainly De Proefbrouwerij in Belgium. It saves building a plant, but you are always a guest.
That came to an end in 2019. To Øl took over an old factory in Svinninge in West Zealand, more than 26,000 square metres, and moved production there into To Øl City. Since 2020 it has brewed itself. The beer goes to more than forty countries, and To Øl regularly brews with others, as with the To Øld Fashioned with Jopen.
