Each herb into the still separately
Gin Mare does not throw everything into the still at once. Each botanical is macerated separately and distilled separately; only then are the distillates blended. That is more work, but it gives the maker control over every component.
The botanicals come from the countries around the Mediterranean: Arbequina olives from Spain, basil from Italy, rosemary from Greece and thyme from Turkey. The olive is the signature note.

Gin Mare is made in Vilanova i la Geltrú, a small port town on the coast south of Barcelona. Behind the distillery is the Giró family, who have been in the trade there for generations.
When the bottle appeared in 2007, it was a break with convention: not an English list of botanicals but the flavours of Mediterranean cuisine. Olive, rosemary, thyme and basil in a gin were new.
The Capri edition adds lemon and bergamot from the Sorrento peninsula on top, which makes the bottle clearly more citrus-rich than the regular one.

Where best to start
Start with the regular 70 centilitre bottle. That is the recipe the brand is known for.
The litre bottle is the same gin in a larger size; handy if you pour it more often. The Capri is the variant for those who want more citrus.
