Tolmann’s is small and Dutch, and you can tell from the range: not ten flavour variants, but three bottles that each go a different way. The Premium is the core, the Bourbon Barrel Aged goes on wood and the Huckleberry is infused.

Where most gin distilleries put all the botanicals into the still together, Tolmann’s works ingredient by ingredient. One botanical is distilled, another macerated, the odd component first goes into a cask. Only then are the parts combined.
That takes more work and more time, but it gives the distiller control over each component separately. It is the same idea as at the Dutch genever houses, which also distilled their botanicals by type before blending.
Distilling is done by hand, in the distillery’s own copper stills and in small batches.
Not everything in the still at once, but each botanical in its own way.
Where best to start
Start with the Premium Gin. It is the core of the house and the bottle on which the other two are built.
The Bourbon Barrel Aged is the step for those who want to know what a cask does to gin; the Huckleberry is the most striking of the three, if only for its colour.
