This is the biggest misunderstanding about genever: young and old genever say nothing about how long the bottle has been aged. It is about the recipe.
Oude jenever is the traditional style, with a lot of malt wine: grain spirit distilled in the old-fashioned way. This gives a full, slightly sweet, grainy flavour. Jonge jenever only appeared in the twentieth century, with less malt wine and a more neutral base: lighter and drier, and better suited to mixing.
If a jenever has been aged in a cask, this is stated separately: for example five or ten years. That is something different from old.
Old jenever is not an old bottle. It is an older recipe, with more malt wine.

What is the difference between jonge and old jenever?
That is not about age but about the recipe. Oude jenever has more malt wine and is fuller and grainier; jonge jenever has a more neutral base and is lighter and drier.
How do you serve jenever?
At cellar temperature in a tulip glass rather than ice-cold from a traditional jenever shot glass. Then you taste the grain and the botanicals.
