How long does sake keep after opening?

Sake keeps much shorter after opening than spirits. The Japanese trade organisation JSS advises closing the bottle airtight after opening and putting it in the fridge, and finishing delicate styles such as ginjo and daiginjo within a week. Unopened and well stored, sake keeps its intended colour and flavour for about a year according to the JSS. Namazake, unpasteurised sake, needs less than 5 degrees.

In brief

The key figures

Ginjo and daiginjo According to the JSS, to be finished within a week of opening
Unopened, well stored Up to about a year in the intended colour and flavour
Namazake Store below 5 degrees
Storage location unopened Dark and cool; light and fluctuating temperatures are the greatest enemy
Why dark glass The dark bottle blocks UV light
Fridge temperature The Voedingscentrum advises 4 degrees
Best-before date Not mandatory from 10 percent alcohol by volume, Annex X of Regulation (EU) 1169/2011
Alcohol in sake Usually around 15 percent; in Japan less than 22 percent
Age limit NIX18: verkoop vanaf 18 jaar

How long does an opened bottle of sake keep?

The JSS advises closing an opened bottle of sake airtight and keeping it in the fridge, and finishing delicate styles such as ginjo and daiginjo within a week.

Sturdier sake keeps for longer, but here too: the longer the bottle stands open, the more the aroma and color change. Sake has around 15 percent alcohol and so lacks the protection that spirits at forty percent do have.

Does sake need to go in the fridge?

After opening, yes. The JSS literally names the fridge as the place for an opened bottle.

The Voedingscentrum advises a refrigerator temperature of 4 degrees; for sake that is more than cold enough. Unopened bottles may be kept outside the refrigerator, as long as the spot is dark and cool and the temperature does not fluctuate. If the sake is a namazake, even the unopened bottle belongs below 5 degrees.

How long does an unopened bottle of sake keep?

Properly stored, sake keeps its intended colour and flavour for about a year according to the JSS.

That is not an expiry date but a guideline: after that the bottle remains safe, but the taste departs from what the brewer intended. Sake is therefore not a drink you put away for years, unlike a bottle of whisky or armagnac.

Why is sake often in a dark bottle?

The dark glass blocks UV light.

The JSS names light and fluctuating temperature as the two biggest causes of change in colour and flavour. The higher the temperature, the faster and wider the reactions in the bottle proceed. A dark bottle in a cool, dark cupboard is therefore the best combination.

What is namazake and why does it need to be colder?

Namazake is sake that has not been pasteurised and therefore must be stored below 5 degrees.

With regular sake the drink is heated before it goes into the bottle. With namazake that does not happen, so the enzymes stay active and the drink changes faster. If namazake is on the label, keep the bottle cold from shop to glass.

Is there a best-before date on a bottle of sake?

A best-before date is not mandatory: drinks with 10 percent by volume alcohol or more are exempt from it.

That exemption is in Annex X of Regulation (EU) No 1169/2011. At about 15 percent, sake is above that limit. Many Japanese bottles do state a bottling month; it says how young the sake is, not until when it is good.

Short answer

Short answers to related questions

Can sake spoil?
Becoming unsafe does not happen quickly at 15 percent alcohol, but the taste and colour do change. The JSS advises finishing an opened ginjo or daiginjo within a week.
May an unopened bottle of sake be kept outside the fridge?
Yes, if the place is dark and cool and the temperature does not fluctuate. Namazake belongs below 5 degrees at all times, even unopened.
Does sake keep as long as whisky?
No. Whisky of forty percent hardly changes after opening; sake of fifteen percent changes within weeks.
Does decanting into a smaller bottle help?
Yes, for the same reason as with wine: less air above the drink means less oxygen.
From what age may you buy sake?
Vanaf 18 jaar. NIX18 geldt in Nederland voor alle dranken met alcohol.
