Why this works together

Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.

What is needed

For 4 people

Seared scallops with hazelnut butterWith the mealSeared scallops with hazelnut butter

Ingredients

  • 12 scallops
  • 80 grams butter
  • 40 grams hazelnuts
  • 1 lemon
  • 100 grams lamb's lettuce
  • sea salt and pepper

Method

  1. Toast the hazelnuts golden brown in a dry frying pan, rub off the skins and chop them coarsely.
  2. Pat the scallops dry and season them with sea salt and pepper.
  3. Heat a dash of oil in a frying pan and fry the scallops golden brown for 1.5 to 2 minutes per side.
  4. Melt the butter in a saucepan until it smells nutty brown and add the hazelnuts and a dash of lemon juice.
  5. Divide the lamb's lettuce between the plates, place the scallops on top and spoon the hazelnut butter over them.
With the cheeseMature cheddar

Ingredients

  • 160 grams mature cheddar

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.
Chocolate trufflesAfter the mealChocolate truffles

  • 200 grams dark chocolate
  • 150 millilitres whipping cream

  2. Bring the cream just to the boil and pour it over the chocolate.
  3. Leave for 1 minute, stir to a smooth ganache and stir in the butter.
  4. Leave the ganache to set, covered, in the fridge for at least 2 hours.
  5. Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
  6. Keep cool and take them out of the fridge a quarter of an hour before serving.

After the meal

A cigar with Eddu Ed Gwenn

No dedicated pairing has been worked out for this bottle yet. We chose this cigar to go with Kavalan Single Malt.

Cigars
Our choice

Romeo y Julieta Petit Coronas

Cubaanse petit corona van 129 mm, bloemig en licht van gewicht, naast een fles van 40 volumeprocent.

Why this works together

A petit corona of 129 mm is slim and short. Romeo y Julieta is floral and woody by nature, without the heavy earth of Bolívar or Partagás. Whisky from a warm climate matures quickly and takes on a lot of cask, but at 40% ABV the alcohol weight stays low. A thick or long cigar would overpower it; this size stays alongside.

Also good with this whisky

  • H. Upmann Coronas JuniorPetit corona van 110 mm, korter en droger van toon.
  • Macanudo Café Hyde ParkDominicaanse robusto met hout en room, als de rook iets voller mag zijn.
  • Davidoff Millennium Blend RobustoRobusto of 127 mm with more pepper, for those who want to bring the cigar to the fore.

We do not sell cigars; we supply the whisky.
