Ingredients
- 125 grams of flour
- 2 eggs
- 300 milliliters of milk
- 60 grams of sugar
- 60 grams of butter
- 2 oranges
- 1 lemon
Method
- Whisk the flour with the eggs, a pinch of salt and gradually the milk into a smooth batter and let it rest for 30 minutes.
- Bak in een licht ingevette koekenpan dunne crêpes, ongeveer 1 minuut per kant.

- Caramelise the sugar in a roomy pan, add the butter, the juice and the zest and let it reduce to a syrup.
- Fold the crêpes into quarters, warm them in the sauce for 1 to 2 minutes and serve immediately.
With coffeeChocolate truffles
Ingredients
- 200 grams dark chocolate
- 150 millilitres whipping cream
- 20 grams butter
- 3 tablespoons cocoa powder
Method
- Finely chop the chocolate and put it in a bowl.
- Bring the cream just to the boil and pour it over the chocolate.
- Leave for 1 minute, stir to a smooth ganache and stir in the butter.
- Leave the ganache to set, covered, in the fridge for at least 2 hours.
- Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
- Keep cool and take them out of the fridge a quarter of an hour before serving.
With the cheeseFresh ricotta with honey
Ingredients
- 200 grams fresh ricotta
- 2 tablespoons honey
Method
- Spoon the ricotta into a small bowl.
- Pour the honey over just before serving.
