Chapter 01 · What you taste

Liqueur is not a flavour but a family

Liqueur is a distilled spirit with added flavour and sugar, and at least fifteen per cent alcohol. The flavour comes from fruit, herbs and roots, cream or egg, or nuts, coffee and cocoa. Strength ranges from under twenty to well over forty per cent. Not every liqueur is sweet and soft: a dry herbal liqueur is neither.

Chapter 02 · Fruit

Fruit steeps in the alcohol

In a fruit liqueur, the flavour comes from fruit that has steeped in alcohol, or from juice added later. Orange, cherry, raspberry, peach and blackcurrant are the most common. In a fruit brandy, the fruit itself is fermented and distilled; that is something else. Fruit liqueur is usually served cold or in a cocktail.

Chapter 03 · Herbs and roots

Herbal liqueur is usually drier

In a herbal liqueur, herbs, roots, seeds and peel steep in the alcohol; gentian, wormwood, anise and cinchona bark are classics. The recipes usually stay in-house, and many date back to the days of the apothecary. Herbal liqueur generally has less sugar and more alcohol than fruit liqueur and is served cold or over ice.

Chapter 04 · Cream

Cream shortens the shelf life

A cream liqueur contains cream or milk, bound so that the dairy and alcohol do not separate. That gives the thick, smooth texture, but once opened it keeps for less time than other liqueurs; the label says how long. Storing it cool helps. And better not to mix it with a lot of citrus: acidity makes cream curdle.

Chapter 05 · Strength

From light to robust

The alcohol percentage says more about serving than the flavour family does. Light liqueurs go over ice, in coffee or in a long drink. Robust liqueurs hold their own in a cocktail or are drunk neat after a meal. Sugar and alcohol balance each other: more sugar makes the alcohol come across softer.

Chapter 06 · Netherlands

The Netherlands has its own liqueur tradition

The Netherlands has a long liqueur tradition, grown out of the jenever and herbal houses in Schiedam, Amsterdam and the provinces. Advocaat, boerenjongens, oranjebitter and beerenburg belong to it, as do regional recipes known only in a small area. The base is often grain spirit, which gives a sturdier foundation.

Why here

The broadest category in the shop

Liqueur is an umbrella term for very different drinks: the bessenjenever poured at a funeral, the amaretto in a dessert, the herbal bitter after a heavy meal and the creamy bottle with coffee. What they have in common is that sugar and flavour have been added to a distilled spirit.

Briefly explained

What makes something a liqueur?

  • In brief
  • 273brands in stock
  • 660bottles
  • 15-30%typical alcohol percentage
  • Fridgeonly needed for creamy liqueurs

A liqueur is a distilled spirit with flavour and sugar. The sugar is decisive: there has to be a good amount of it, which is why liqueurs are softer and sweeter than the spirit they are built on.

The base can be almost anything. Jenever for a Dutch berry liqueur, whisky for a creamy liqueur, brandy for many herbal bitters, and rum or neutral spirit for fruit liqueurs. As a result, the alcohol percentage is usually lower than for straight spirits: often between fifteen and thirty per cent.

Practical tip: most liqueurs keep for months after opening, but creamy liqueurs made with milk or cream belong in the fridge once opened and are at their best within six months.

Creamy liqueurs belong in the fridge once opened. The rest can simply stay in the cupboard.

Frequently asked questions

How many liqueurs does ’t Bockje have?

660 bottles from 273 brands.

How long does liqueur keep after opening?

Most liqueurs keep for months in the cupboard. Creamy liqueurs with milk or cream belong in the fridge and are at their best within about six months.

Why is liqueur less strong than ordinary spirits?

Because sugar and flavourings are added, which dilutes the alcohol. Most liqueurs are between fifteen and thirty per cent.

What is the difference from spirits?

With liqueur, sugar and flavour have been added to a distilled spirit. That makes it sweeter and usually lower in alcohol.
