Sherry is fortified wine from the triangle around Jerez in southern Spain, and the differences are huge. Fino and manzanilla are bone dry and mature under a layer of yeast, the flor, which protects the wine from oxygen. Amontillado and oloroso do mature with oxygen and take on nutty and caramel notes. Pedro Ximénez is almost syrup.
Sherry matures in a solera: casks in tiers, drawn from the bottom and topped up from above. This keeps the style the same over the years.
Drink fino ice-cold and soon after opening; an oloroso or PX keeps well for weeks.
Once opened, fino is at its best within days. A PX can be left for weeks.
