A green curry with chicken, coconut milk and basil. With spicy food an alcohol-free witbier is no concession, but the better choice.

From the shelf

The bottle

Lowlander 0.00% Wit comes from Lowlander in the Netherlands and contains no alcohol. It is brewed as a witbier, with wheat, coriander and citrus peel: slightly hazy, little bitterness and firm carbonation. You taste citrus and a gentle spiciness.

The combination

Why this works together

Alcohol amplifies the burning effect of chilli peppers: the higher the percentage, the fiercer the heat comes back. A beer without alcohol does not do that. What it does contain (carbonation and a light sweetness from the malt) rinses the coconut-rich sauce from the tongue and tames the heat. The citrus peel in the beer echoes the lime in the curry.

At the table

The dish

  • Before 4 people
  • Ready in 30 minutes
  • Type main course

What you need

  • 600 g chicken thigh fillet, in strips
  • 3 tbsp green curry paste
  • 400 ml coconut milk
  • 200 ml chicken stock
  • 1 tbsp sunflower oil
  • 200 g green beans, halved
  • 1 red pepper, cut into strips
  • 1 courgette, in half-moons
  • 2 tsp fish sauce
  • 1 tsp palm sugar or light brown soft sugar
  • 1 lime, the juice and the zest
  • 1 handful of Thai or regular basil
  • 300 g jasmine rice

How to make it

  1. Cook the rice according to the instructions on the packaging.
  2. Heat the oil in a wok or snack pan and fry the curry paste for 1 minute, until fragrant.
  3. Add half of the coconut milk and let it simmer for 3 minutes, until the oil separates out.
  4. Add the chicken and stir until all the strips are white all around.
  5. Pour in the rest of the coconut milk and the stock and bring it to the boil.
  6. Add the haricots verts and let them cook for 4 minutes. Then add the pepper and the courgette and cook for another 4 minutes.
  7. Season with the fish sauce, the sugar, the lime juice and the lime zest.
  8. Stir in the basil just before serving and serve the rice with it.

In the glass

Serving

Pour at 5 to 7 degrees into a wide glass. Pour with a firm arc, so that a head of two fingers forms: with an alcohol-free beer the foam collapses faster, and that head is what keeps the aroma above the glass.
