Ingredients

  • 4 venison steaks of 150 grams
  • 200 grams forest fruits
  • 100 millilitres red wine
  • 100 millilitres game stock
  • 30 grams butter
  • 1 kilo potatoes
  • 400 grams Brussels sprouts

Method

  1. Take the steaks out of the fridge half an hour before cooking and season them with salt and pepper.
  2. Peel the potatoes and boil them in salted water for about 20 minutes until tender.
  3. Trim the Brussels sprouts and boil them for 6 to 8 minutes until just tender.
  4. Fry the steaks in hot butter for 2 to 3 minutes per side and leave them to rest, covered, for 5 minutes.
  5. Deglaze the pan with the red wine and game stock, add the forest fruits and reduce to a glossy sauce.
  6. Slice the meat on the diagonal and serve with the sauce, the potatoes and the Brussels sprouts.

  • 160 grams Stilton

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

Ingredients

  • 1 roll of sweet shortcrust pastry
  • 200 grams pecans
  • 3 eggs
  • 150 grams dark soft brown sugar
  • 150 millilitres maple syrup
  • 50 grams butter

Method

  1. Preheat the oven to 180 °C and line a tart tin with the pastry.
  2. Toast the pecans in a dry pan for 5 minutes and coarsely chop half of them.
  3. Melt the butter and whisk it with the eggs, soft brown sugar, maple syrup and a pinch of salt into a smooth filling.
  4. Scatter the chopped nuts over the base, pour the filling over them and arrange the whole nuts on top.
  5. Bake for 40 to 45 minutes until the filling has set but still gives slightly in the middle.
  6. Leave to cool completely before cutting.

A 143 mm Cuban corona gorda, dry and nutty, set against the toffee and raisin of the sherry finish.

Why this works together

The Magnum 46 is a corona gorda of 143 mm with a moderate thickness: long enough to carry on calmly, not so wide that the smoke becomes heavy. H. Upmann is dry and nutty by nature. Because the sherry finish here only colours the outside of the whisky and the core stays soft, a cigar that adds dryness suits better than one that is sweet itself.
