Ingredients
- 200 grams smoked salmon
- 1 bunch of dill
- 100 grams crème fraîche
- 8 small toasts
Method
- Finely chop the dill and stir half of it into the crème fraîche with a little pepper.
- Spread the toasts with the crème fraîche.
- Top with a piece of smoked salmon and garnish with the rest of the dill.

Ingredients
- 160 grams aged Gouda
Method
- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.
After the mealRoasted walnuts
Ingredients
- 150 grams walnuts
- 1 tablespoon honey
- sea salt
Method
- Preheat the oven to 170 °C.
- Mix the walnuts with the honey and spread them out on a baking tray lined with baking paper.
- Roast for 8 to 10 minutes until fragrant and lightly coloured, stirring halfway.
- Sprinkle immediately with sea salt and leave to cool until crisp.

Short Dominican perfecto under a Cameroon wrapper; sweetish spice against the dry pepper of the malt.
Why this works together
The Short Story has a Cameroon wrapper, which gives a sweetish spiciness rather than sharp pepper. The dry pepper is therefore in the glass and not in the cigar, so the two complement each other instead of doubling the same note.
