Why this works together

Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.

What is needed

For 4 people

Seared scallops with hazelnut butterWith the mealSeared scallops with hazelnut butter

Ingredients

  • 12 scallops
  • 80 grams butter
  • 40 grams hazelnuts
  • 1 lemon
  • 100 grams lamb's lettuce
  • sea salt and pepper

Method

  1. Toast the hazelnuts golden brown in a dry frying pan, rub off the skins and chop them coarsely.
  2. Pat the scallops dry and season them with sea salt and pepper.
  3. Heat a dash of oil in a frying pan and fry the scallops golden brown for 1.5 to 2 minutes per side.
  4. Melt the butter in a saucepan until it smells nutty brown and add the hazelnuts and a dash of lemon juice.
  5. Divide the lamb's lettuce between the plates, place the scallops on top and spoon the hazelnut butter over them.
With the cheeseMature cheddar

Ingredients

  • 160 grams mature cheddar

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

After the meal

A cigar with James Eadie's ‘Trade Mark X'

We have worked out this cigar alongside Oban 14 Years Old Highland Malt, another whisky from Scotland.

Cigars
Our choice

Cohiba Siglo I

The shortest size in the Siglo series, 102 mm, light to medium; creamy and just firm enough alongside the briny character.

Why this works together

The Siglo I is short and moderate in strength, with a creamy, lightly grassy smoke. Salt brings smoke forward, and the brininess of the Oban works as that amplifier here. Because the cigar is finished in half an hour, 43 percent ABV is more than enough.

Also good with this whisky

  • Cohiba Siglo IISlightly longer, same house style; the choice if you have a bit more time.
  • Quai d’Orsay No. 50Short Cuban robusto of moderate strength, with a soft, woody character.
  • Rafael González PerlasOne of the mildest short Cubans; lets the salt in the whisky do the work.

We do not sell cigars; we supply the whisky.
