Why this works together

Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.

What is needed

For 4 people

Smoked salmon with dillWith the mealSmoked salmon with dill

Ingredients

  • 200 grams smoked salmon
  • 1 bunch of dill
  • 100 grams crème fraîche
  • 8 small toasts

Method

  1. Finely chop the dill and stir half of it into the crème fraîche with a little pepper.
  2. Spread the toasts with the crème fraîche.
  3. Top with a piece of smoked salmon and garnish with the rest of the dill.
Aged GoudaWith the cheeseAged Gouda

Ingredients

  • 160 grams aged Gouda

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

  2. Chop the dates, pour boiling water over them, leave to soak for 10 minutes and mash them.
  3. Beat the butter with the brown sugar until creamy, beat in the eggs and fold in the self-raising flour and the dates.
  4. Pour the batter into the dish and bake for 30 to 35 minutes until a skewer comes out clean.
  5. For the sauce, heat the cream with the brown sugar and simmer gently for 5 minutes, stirring, until it thickens.

After the meal

A cigar with Masthouse Column Malt Whisky

No pairing of our own has been worked out for this bottle yet. We chose this cigar to go with The Hakushu Distillers Reserve Single Malt Japanse Whisky.

Cigars
Our choice

Cohiba Exquisitos

Cubaanse panetela van 126 mm, smal en grasachtig, zodat de frisse tonen van Hakushu overeind blijven.

Why this works together

A 126 mm panetela is slim: little tobacco is involved at any one time, so the smoke stays thin and dry. Cohiba puts grass and wood underneath instead of earth. With a malt that draws its character from green, fresh notes, any wider size is too much; this one lets the grass in the glass and the grass in the tobacco stand side by side.

Also good with this whisky

  • La Gloria Cubana Medaille d’Or No. 4Panetela of 152 mm, longer but just as narrow in smoke.
  • Rafael González PerlasPetit corona van 102 mm, kort en mild, voor een klein moment.
  • H. Upmann Coronas JuniorPetit corona van 110 mm, droger en notiger, waardoor de honing opvalt.

We do not sell cigars; we supply the whisky.
