Why this works together

Chosen by type (whisky) and name (peat or smoke). A smoky whisky calls for dishes with a pronounced character of their own: smoked fish, something from the grill or a robust blue cheese.

What is needed

For 4 people

Oysters au naturel with lemonWith the mealOysters au naturel with lemon

Ingredients

  • 24 oysters
  • 2 lemons
  • 1 shallot
  • 2 tablespoons of red wine vinegar
  • freshly ground black pepper

Method

  1. Chop the shallot very finely and mix it with the red wine vinegar and freshly ground black pepper.
  2. Open the oysters with an oyster knife, leave the liquid in the shell and remove any loose bits of shell.
  3. Lay the well-chilled oysters on a platter and serve with lemon wedges and the shallot vinegar alongside.
Aged GoudaWith the cheeseAged Gouda

Ingredients

  • 160 grams aged Gouda

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

  • 200 grams dark chocolate
  • 150 millilitres whipping cream
  • 20 grams butter

Method

  1. Finely chop the chocolate and put it in a bowl.
  2. Bring the cream just to the boil and pour it over the chocolate.
  3. Leave for 1 minute, stir to a smooth ganache and stir in the butter.
  4. Leave the ganache to set, covered, in the fridge for at least 2 hours.
  5. Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
  6. Keep cool and take them out of the fridge a quarter of an hour before serving.

After the meal

A cigar with Murray McDavid The Vatting 6Y 2014 Peatside

Een rokerige whisky, zo zegt de naam. Deze sigaar hebben wij uitgewerkt naast Caol Ila Islay Single Malt 12 Years Old, ook een rokerige whisky.

Cigars
Our choice

Ramón Allones Specially Selected

Full-bodied Cuban robusto with earth and dark fruit; holds its own against peat.

Why this works together

Peat smoke and tobacco smoke add up, so this only works if the cigar itself has weight. The Specially Selected does: it is full, earthy and spicy and will not be overpowered. The sweet malt and toffee in the whisky absorb the dryness of the tobacco, where a bone-dry whisky would make the whole thing harsh.

Also good with this whisky

We do not sell cigars; we supply the whisky.
