Why this works together

Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.

What is needed

For 4 people

Seared scallops with hazelnut butterWith the mealSeared scallops with hazelnut butter

Ingredients

  • 12 scallops
  • 80 grams butter
  • 40 grams hazelnuts
  • 1 lemon
  • 100 grams lamb's lettuce
  • sea salt and pepper

Method

  1. Toast the hazelnuts golden brown in a dry frying pan, rub off the skins and chop them coarsely.
  2. Pat the scallops dry and season them with sea salt and pepper.
  3. Heat a dash of oil in a frying pan and fry the scallops golden brown for 1.5 to 2 minutes per side.
  4. Melt the butter in a saucepan until it smells nutty brown and add the hazelnuts and a dash of lemon juice.
  5. Divide the lamb's lettuce between the plates, place the scallops on top and spoon the hazelnut butter over them.
With the cheeseMature cheddar

Ingredients

  • 160 grams mature cheddar

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.
Chocolate trufflesAfter the mealChocolate truffles

Ingredients

  • 200 grams dark chocolate
  • 150 millilitres whipping cream
  • 20 grams butter
  • 3 tablespoons cocoa powder

Method

  1. Finely chop the chocolate and put it in a bowl.
  2. Bring the cream just to the boil and pour it over the chocolate.
  3. Leave for 1 minute, stir to a smooth ganache and stir in the butter.
  4. Leave the ganache to set, covered, in the fridge for at least 2 hours.
  5. Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
  6. Keep cool and take them out of the fridge a quarter of an hour before serving.

After the meal

A cigar with Smuggler's Trail Dutch Single Blended Whisky

We have paired this cigar with Millstone American Oak Zuidam Distillers, another whisky from the Netherlands.

Cigars
Our choice

Oliva Connecticut Reserve Robusto

Nicaraguan robusto of 127 mm under a light shade wrapper: wood and cream alongside the vanilla from American oak.

Why this works together

American oak gives whisky mainly vanilla and coconut; that is a softer side than what a sherry cask leaves behind. The Connecticut Reserve is a robusto of 127 mm under a light shade wrapper, which gives wood and cream and hardly any pepper. The two run in step. The risk is sameness, which is why it stays at 127 mm and no longer.

Also good with this whisky

  • Macanudo Café Hyde ParkMild robusto with the same low-pepper tone, slightly drier on the finish.
  • AVO Classic No. 2Dominican under a Connecticut wrapper, longer and even more restrained.
  • Davidoff Millennium Blend RobustoRobusto of 127 mm with more pepper, as a counterweight to the sweet wood.

We do not sell cigars; we supply the whisky.
