Beer first, then the alcohol out
Hertog Jan was late with an alcohol-free beer. The 0.0 only reached the shelves in November 2019, years after the first 0.0 beers from other Dutch brewers.
The brewery in Arcen chose the route of brewing fully and then removing: the beer is first brewed completely, with the same grains as the Pilsener, selected hops, spring water and its own yeast, and only then is the alcohol taken out.
Brewmaster Gerard van den Broek said at the launch that a lot of work went into bringing back flavour and bitterness, because removing alcohol also removes flavour.

There are roughly two ways to make beer without alcohol. You can steer the fermentation so that hardly any alcohol forms, or you brew ordinary beer and then remove the alcohol afterwards. Hertog Jan does the second.
The brewery in Arcen uses the same grains as for the Pilsener, selected hops, spring water and its own yeast. The beer is fully brewed and only at the end is the alcohol removed. According to the brewery, this preserves the characteristic beer taste.
Brewmaster Gerard van den Broek said at the launch that alcohol-free is the hardest to brew: removing alcohol also removes flavour, and you have to find a way to get it back in. The brewery itself names the malty character, the spicy notes and the hop bitterness as what remains.
Removing alcohol also removes flavour; that then has to be put back.
What exactly does 0.0 mean?
In the Netherlands the rules state when alcohol-free may appear on a label. The Warenwetbesluit gereserveerde aanduidingen allows that designation at no more than 0.1 per cent alcohol. If there is more in it, up to and including 1.2 per cent, it is called low-alcohol.
The designation 0.0 does not appear separately in those rules. Brewers put it on the label themselves for beer that stays below the alcohol-free limit. Hertog Jan does so with this beer.
So look at the figure and not just the word. A beer of 0.3 per cent (you see them more and more often) may not legally call itself alcohol-free beer; that is low-alcohol beer.
With beer from abroad you also need to pay attention. Designations such as alkoholfrei or alcohol free follow the rules of the country of origin, and that limit is not set at the same point everywhere.
