About this bottle

Delirium Red is het fruitbier van de Delirium-reeks van Brouwerij Huyghe: een diep donkerrood Belgisch bier van 8% vol, gebrouwen met zure kersen. Het bier won medailles op onder meer de World Beer Awards, de London Beer Competition en de International Beer Challenge. Huyghe vult het af in flesjes van 33 cl, zoals deze, en in flessen van 75 cl.

The beginning of the series lies in the late eighties, when Huyghe developed the Delirium Tremens, originally for an Italian client. The name came about with a wink to the experiences of excise inspectors during tastings, and the first label with the pink elephant was designed by a student. From that one beer a whole family grew, from the Nocturnum to this Red.

Een stevig fruitbier van 8%. De Delirium Red is een roodkleurig fruitbier met roodfruitsmaken en met zeker meer “bite” dan de meeste fruitbieren. Dit maakt hem complexer en daardoor zeker het proberen waard.

Main courseGrilled entrecôte

Ingredients

4 entrecôtes of 200 grams
2 tablespoons olive oil
4 sprigs of rosemary
1 kilo potatoes
1 bunch of parsley
coarse sea salt and pepper

Method

Take the entrecôtes out of the fridge half an hour before grilling and brush them with olive oil and chopped rosemary.
Parboil the potatoes for 15 minutes, cut them into wedges and roast them with oil for 25 minutes in an oven at 200 °C.
Grill the entrecôtes on a very hot grill for 2 to 3 minutes per side for a pink centre.
Let the meat rest for 5 minutes under aluminium foil and sprinkle with coarse sea salt and pepper.
Sprinkle the potatoes with chopped parsley and serve with the meat.

Ingredients

160 grams of Leyden cumin cheese

Method

Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
Only cut or break the cheese just before serving.

Ingredients

200 grams dry sausage and ham
1 baguette

Method

Take the sausage and ham out of the fridge 20 minutes before serving.
Cut the sausage into thin slices and the baguette into rounds.
Arrange the sausage and ham loosely on a board and serve with the bread.
