Ingredients
- 8 shrimp croquettes
- 1 lemon
Method
- Heat the frying oil to 175 °C.
- Fry the croquettes in small batches for 4 to 5 minutes until golden brown and hot inside.
- Drain on kitchen paper and serve with lemon wedges.
With the mealGrilled mackerel with rhubarb
Ingredients
- 4 mackerel
- 300 grams of rhubarb
- 2 tablespoons sugar
- 2 tablespoons olive oil
- 1 lemon
- 800 grams of baby potatoes
- salt and pepper
Method
- Boil the baby potatoes in salted water for 15 to 20 minutes until tender.
- Cut the rhubarb into pieces and stew it with the sugar and a splash of water for 5 to 8 minutes into a coarse compote.
- Score the skin of the cleaned mackerel a few times and brush them with olive oil, salt and pepper.
- Grill the mackerel for 4 to 5 minutes per side on a hot grill or griddle pan, until the flesh comes away from the bone.
- Drizzle with lemon juice and serve with the rhubarb compote and the baby potatoes.
With the cheeseMozzarella di bufala
Ingredients
- 160 grams of mozzarella di bufala
Method
- Take the mozzarella out of the fridge half an hour before serving.
- Tear it into pieces and serve immediately.
