Why here

Puerto Rican rum, and what that means

Puerto Rico has its own rules: rum that bears the island's name must have spent at least a year on oak. So even the white rum you use in a cocktail has been aged there, and only filtered afterwards.

Don Q comes from Ponce on the south coast, from the family firm Serrallés, which has been there for generations. The name refers to Don Quixote.

About the distillery

Serrallés, Ponce

  • The house in brief
  • 1865The year the family goes by.
  • PonceOn the south coast of Puerto Rico.
  • ColumnThe way of distilling.
  • 1 yearLegal minimum maturation.

Destilería Serrallés is based in Ponce and is still owned by the same family. Puerto Rico is one of the largest rum producers in the world; Don Q is its best-known home-grown brand.

It is distilled from molasses in columns, which gives a lighter style than Jamaican pot still rum. Everything then matures on the island itself in oak casks.

The Signature Release is a single-cask bottling from the 2005 vintage; the Caliche is intended for behind the bar.

Even the white rum from Puerto Rico is aged: the law there requires it.

Where best to start

The Caliche is the bottle for a mojito or a daiquiri; that is what it was made for.

The single-cask Signature Release is the bottle to pour neat.
