With Central American rum, a number on the bottle is often an average or the oldest component. Flor de Caña does it differently: the number stands for the time the rum has actually spent in cask. That makes the range easy to follow: four, seven, twelve, eighteen and twenty-five years.
Everything happens in Chichigalpa, on its own plantation. The distillery lies about eight kilometres from the active San Cristóbal volcano; the brand uses that volcano in its logo for good reason.

The Pellas family started in 1890 with the Ingenio San Antonio sugar plantation near Chichigalpa; the brand was added in 1937. The company is still owned by the same family, now in its fifth generation.
The molasses comes from the estate's own plantation. It is distilled in five steam-heated columns and aged in warehouses without climate control, so simply in the Nicaraguan heat, in second-hand bourbon casks.
Since 2018 the distillery has been Fair Trade certified; in 2017 the house was named rum producer of the year by the industry.
The number on the bottle is the time the rum actually spent in cask.
Where best to start
The 7 year old is the starting point: enough maturation to drink neat and still suitable for a cocktail.
The 12 and the 18 are the bottles to pour neat. The 25 year old is a collector's bottle.
The Extra Seco is white and dry; it is meant for mixing.
