Why here

Cachaça is not rum, and yet it kind of is

Like rhum agricole, cachaça is made from freshly pressed sugar cane juice, but it is a category of its own with its own Brazilian rules. It may only be made in Brazil and must be between 38 and 48 percent.

For a caipirinha you need it: cachaça, lime, cane sugar and ice. The Prata is the bottle for that; the Reserva Carvalho has lain on wood and is fuller.

How do you make a caipirinha?

Half a lime cut into wedges, two spoons of cane sugar, pressed briefly together in the glass. Do not crush it finely, or it turns bitter. Then add crushed ice and pour the cachaça over it. Stir and it is ready. That is all there is to it, and precisely for that reason it needs good cachaça.

Ypióca comes from Ceará, in the north-east of Brazil. It is one of the best-known cachaça brands in the country and is also easy to find outside Brazil.

The difference with rum lies in the rules: cachaça must come from Brazil, be made from fresh cane juice and be between 38 and 48 percent. Ageing in native wood species is common there, alongside oak.

Carvalho means oak. The Reserva Carvalho has therefore aged in oak; the Prata is unaged.

Cachaça may only be called that if it comes from Brazil.

Which bottle

Where best to start

For a caipirinha: the Prata. It is unaged and lets the lime do the work.

The Reserva Carvalho has aged on oak and is fuller; you can also serve it neat.
