What goes with brandy

Brandy is the collective name for distilled wine. Cognac and armagnac fall under it, but the Spanish brandy de Jerez and the Dutch vieux follow the same idea too.

What the brandy has aged in matters most. A cask that previously held sherry gives raisin and nut; a new oak cask gives vanilla and coconut.

Brandy is the classic after-dinner drink, but a younger bottle also works well as a long drink, with ginger beer or with sparkling water and a twist of lemon peel.
