What eau de vie goes with
Eau de vie is distilled fruit without wood ageing: pear, cherry, raspberry, mirabelle or plum. Clear in the glass, and the fruit is in the aroma, not in the taste.
That last one surprises most people. You smell ripe pear and expect sweetness, and what follows is bone dry. It is precisely that difference that makes it useful after a heavy dessert.
Because no wood is involved, there is nothing that masks the fruit. A poor distillation you taste immediately; a good one smells of the fruit as if you were cutting it open.
