Bottle of Brewdog Punk AF Alcoholvrij bier, beer

From the shelf

The bottle

Brewdog Punk AF comes from Brewdog in England and is an alcohol-free beer of 0.5 percent ABV. The bottle contains 33 centilitres. What an alcohol-free beer lacks is the weight that alcohol gives; what remains are the malt, the hops and the carbonation, and those three determine the flavour here.

The combination

Why this works together

Alcohol actually makes the sting of sambal stronger; with spicy food a beer without alcohol is therefore not a concession but an advantage. The carbonation washes the oil from the wok away, the hop bitterness stands out against the sweetness of the ketjap and the malt holds everything together without anything heavy ending up in the glass.

At the table

The dish

  • Before 4 people
  • Ready in 30 minutes
  • Type main course

What you need

  • 400 grams egg noodles
  • 600 grams chicken breast, in strips
  • 2 red peppers, in strips
  • 200 grams bean sprouts
  • 3 spring onions, in rings
  • 2 cloves of garlic, finely chopped
  • 1 tablespoon grated fresh ginger
  • 4 tablespoons of soy sauce
  • 2 tablespoons ketjap manis
  • 1 teaspoon sambal
  • 3 tablespoons sunflower oil
  • 1 lime

How to make it

  1. Cook the noodles according to the instructions on the packet, rinse them cold and drain them well.
  2. Mix the soy sauce, the ketjap, the sambal and the lime juice in a small bowl.
  3. Heat a wok or large frying pan until it almost smokes and add a tablespoon of oil.
  4. Fry the chicken in two batches, 3 minutes per batch, until browned. Lift it out of the pan.
  5. Put the rest of the oil in the pan and stir-fry the garlic and ginger for 30 seconds.
  6. Add the bell pepper and stir-fry it for 2 minutes; it may stay crisp.
  7. Add the noodles, the chicken and the bean sprouts and toss everything well.
  8. Pour the sauce mixture over it, toss for another minute and scatter the spring onion over it.

In the glass

Serving

Serve at 5 to 7 degrees in a straight glass. Alcohol-free beer is best drunk cold and young; do not leave the bottle open for long, because the carbonation is half the work here.
