What goes with vermouth
Vermouth is wine with herbs infused into it and some alcohol added, with wormwood as the fixed flavouring. That makes it slightly bitter, even when it is sweet.
Dry vermouth is pale and taut and belongs in the martini. Red vermouth is sweeter and spicier and forms the base of the negroni and the americano.
Vermouth is wine and behaves like it: once open it belongs in the fridge and is at its best within a few weeks.
