Only sparkling wine from the Champagne region may carry that name. The main grapes are Chardonnay, Pinot Noir and Pinot Meunier.
Blanc de blancs is made exclusively from white grapes, usually chardonnay, and is crisp and fresh. Blanc de noirs is made from black grapes and is fuller.
Brut, extra brut and demi-sec are about the dosage: the bit of sugar added after uncorking. The same wine can seem like a completely different wine with a different dosage.

What does brut mean on a bottle of champagne?
Brut says something about the amount of sugar added after disgorgement, the dosage. Brut is dry, extra brut is even drier and brut nature has nothing added. Demi-sec is clearly sweet.
