Why this works together

Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.

What is needed

For 4 people

Barbecued spare ribsWith the mealBarbecued spare ribs

Ingredients

  • 2 kilos spare ribs
  • 6 tablespoons barbecue sauce
  • 2 tablespoons honey
  • 2 teaspoons smoked paprika
  • 2 cloves garlic
  • 4 corn cobs

Method

  1. Preheat the oven to 150 °C.
  2. Rub the spare ribs with the paprika, salt and pepper, wrap them in aluminium foil and cook them in the oven for 2 to 2.5 hours.
  3. Mix the barbecue sauce with the honey and the crushed garlic.
  4. Boil the corn cobs for 10 minutes in salted water.
  5. Grill the spare ribs and the corn for 10 minutes on the hot barbecue, brushing the ribs regularly with the sauce until they shine.
With the cheeseMature cheddar

Ingredients

  • 160 grams mature cheddar

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.
Chocolate trufflesAfter the mealChocolate truffles

Ingredients

  • 200 grams dark chocolate
  • 150 millilitres whipping cream
  • 20 grams butter
  • 3 tablespoons cocoa powder

Method

  1. Finely chop the chocolate and put it in a bowl.
  2. Bring the cream just to the boil and pour it over the chocolate.
  3. Leave for 1 minute, stir to a smooth ganache and stir in the butter.
  4. Leave the ganache to set, covered, in the fridge for at least 2 hours.
  5. Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
  6. Keep cool and take them out of the fridge a quarter of an hour before serving.

After the meal

A cigar with Glen Ord 2011

We have worked out this cigar alongside Old Pulteney Whisky 12 Years, another whisky from Scotland.

Cigars
Our choice

H. Upmann Half Corona

Cuban size of 90 mm, light to medium; finished in half an hour and so suitable for those who don't have an hour.

Why this works together

A half corona is short and not heavy, but it does bring the earthy note of Cuban tobacco. That earthiness plays off the salt in the whisky and brings the smoky note forward without inflating it. The cigar is too short to become heavy, and at 40 percent ABV the whisky brings no sharpness.

Also good with this whisky

  • Romeo y Julieta Petit CoronasShort Cuban with a woody, floral style that leaves room for the salt in the whisky.
  • Hoyo de Monterrey Petit RobustoThicker but just as short, with the lighter touch this house is known for.
  • Por Larrañaga Petit CoronasOne of the mildest Cuban sizes, pleasant if the tobacco is to stay in the background.

We do not sell cigars; we supply the whisky.
