Why this works together

Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.

What is needed

Smoked salmon with dillWith the mealSmoked salmon with dill

Ingredients

  • 200 grams smoked salmon
  • 1 bunch of dill
  • 100 grams crème fraîche
  • 8 small toasts

Method

  1. Finely chop the dill and stir half of it into the crème fraîche with a little pepper.
  2. Spread the toasts with the crème fraîche.
  3. Top with a piece of smoked salmon and garnish with the rest of the dill.
ComtéWith the cheeseComté

Ingredients

  • 160 grams Comté

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.

After the meal

A cigar with Infrequent Flyers Loch Lomond Croftengea 16 Years Old 2005

We have worked out this cigar alongside Clynelish, another whisky from Scotland.

Cigars
Our choice

Juan López Selección No. 2

Cuban robusto of 124 mm, dry and spicy, set against the pepper in the finish.

Why this works together

Among the Cuban houses, Juan López is dry and spicy without the heavy earth of Bolívar or Partagás. A robusto of 124 mm holds that tone evenly. Alongside a malt that already has pepper in its own finish, what matters above all is that the salt and seaweed of Clynelish set something different against it; the same pepper twice without salt would turn flat.

Also good with this whisky

  • Vegas Robaina FamososA 124 mm robusto with more earthiness, closer to the smoky note in the whisky.
  • Partagás Serie D No. 5Petit robusto van 110 mm, zwaarder en korter, voor wie minder lang wil doorgaan.
  • E.P. Carrillo EncoreDominican robusto with pepper and cedar, as a counterweight to the seaweed.

We do not sell cigars; we supply the whisky.
