Why this works together
Chosen by type (whisky). Whisky goes with dishes that have their own character, with an aged cheese and, after the meal, with something with chocolate, caramel or nuts.
What is needed
For 4 people
With the mealSeared scallops with hazelnut butter
Ingredients
- 12 scallops
- 80 grams butter
- 40 grams hazelnuts
- 1 lemon
- 100 grams lamb's lettuce
- sea salt and pepper
Method
- Toast the hazelnuts golden brown in a dry frying pan, rub off the skins and chop them coarsely.
- Pat the scallops dry and season them with sea salt and pepper.
- Heat a dash of oil in a frying pan and fry the scallops golden brown for 1.5 to 2 minutes per side.
- Melt the butter in a saucepan until it smells nutty brown and add the hazelnuts and a dash of lemon juice.
- Divide the lamb's lettuce between the plates, place the scallops on top and spoon the hazelnut butter over them.
With the cheeseStilton
Ingredients
- 160 grams Stilton
Method
- Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
- Only cut or break the cheese just before serving.
After the mealChocolate truffles
Ingredients
- 200 grams dark chocolate
- 150 millilitres whipping cream
- 20 grams butter
- 3 tablespoons cocoa powder
Method
- Finely chop the chocolate and put it in a bowl.
- Bring the cream just to the boil and pour it over the chocolate.
- Leave for 1 minute, stir to a smooth ganache and stir in the butter.
- Leave the ganache to set, covered, in the fridge for at least 2 hours.
- Scoop small portions with a teaspoon, quickly roll them into balls and coat them in the cocoa powder.
- Keep cool and take them out of the fridge a quarter of an hour before serving.

A cigar with Johnnie Walker The Gold Route
We have paired this cigar with Kilkerran 12 Year Old, another whisky from Scotland.

Arturo Fuente Hemingway Short Story
Short Dominican perfecto under a Cameroon wrapper; sweetish spice against the dry pepper of the malt.
Why this works together
The Short Story has a Cameroon wrapper, which gives a sweetish spiciness rather than sharp pepper. The dry pepper is therefore in the glass and not in the cigar, so the two complement each other instead of doubling the same note. The perfecto format tapers at both ends: the cigar smokes more concentrated at first and then opens up.
Also good with this whisky
- Arturo Fuente Hemingway SignatureThe same blend in a longer perfecto, for those sitting for more than half an hour.
- Oliva Serie GNicaraguan cigar, also with a Cameroon wrapper, medium in strength and widely available.
- Davidoff Nicaragua Short CoronaShort size with Nicaraguan tobacco; more peppery than the Fuentes and therefore the strongest of this line-up.
We do not sell cigars; we supply the whisky.
