What heat does to a cask
Tel Aviv has about three hundred sunny days a year, and that greatly speeds up the interplay between whisky and wood. The annual evaporation loss there is around twelve percent; in Scotland it is about two.
M&H also uses warehouses in four other places, each with its own climate: the Sea of Galilee, the mountains near Jerusalem, the desert and the Dead Sea. At the Dead Sea temperatures rise to around fifty degrees and up to a quarter is lost per year.

Built for a hot climate
- The distillery in brief
- JaffaIn Tel Aviv, Israel.
- 2012Company founded.
- 2015Distillation at the current location.
- 10%The heart cut, kept narrow.
The Scottish whisky scientist Dr Jim Swan guided the set-up, specifically aimed at distilling and maturing in a hot climate. He died in February 2017. Head distiller from the start is Tomer Goren.
It is double distilled on two copper pot stills. Because maturation goes so fast, a narrow cut of about ten percent is taken. So little is left of each run, but it is the best part.
The barley comes from England, Germany and the Czech Republic; the local water is demineralised. The whole range is kosher certified. In March 2023, the Elements Sherry Cask won the title World’s Best Single Malt at the World Whiskies Awards.
Twelve percent evaporation per year, against two in Scotland.
What these bottles go with
Drink it neat. A young whisky from a hot climate tastes different from a young whisky from Scotland, and that is exactly the point.
Be careful with the comparison that three years here equals six to eight years there. That the wood works faster is measurable; that it yields the same result is not.
