Why here

Two bottles made only for the Benelux

With Milk & Honey you usually only see the Classic. We have seven, including two editions the house bottled especially for the Benelux and a new make that lets you taste what goes into the cask.

Israeli whisky matures quickly: around twelve percent evaporates per year. Not sure which one you need? Give us a call. That is what we are here for.

About the distillery

Making whisky in Tel Aviv

  • Milk & Honey in four facts
  • 2013the distillery is founded.
  • Jim Swandesigned the stills and chose the casks; he died in 2017.
  • 300sunny days a year speed up the maturation.
  • STRshave, toast, rechar: the cask treatment for warm climates.

M&H is Israel’s first whisky distillery and is located in the Jaffa district of Tel Aviv. The company was founded in 2013; in May 2017 the first Israeli single malt was released.

The Scottish consultant Jim Swan helped set up the distillery: he designed the stills, chose the yeast and the casks and was the first master distiller. He died in 2017. The STR technique (shave, toast, rechar) also comes from him, in which a cask is shaved, toasted and charred again. That approach was devised for whisky that matures in a warm climate.

And it is warm. Tel Aviv has well over three hundred sunny days a year and the distillery reckons on about twelve percent evaporation per year; in Scotland it is around two. Israeli whisky is therefore young in years but not in taste.

Shaving a cask, toasting it and charring it again: that is STR.

Special casks
