Advokaat in a preserving jar, from a jenever distillery
Advocaat is a spirit-based egg liqueur: egg yolk, sugar and alcohol, made into a thick yellow drink. The European rules require at least 140 grams of quality egg yolk and at least 150 grams of sugar or honey per litre, and at least 14 per cent alcohol by volume. If an egg drink falls below that, it may not be called advocaat.
There are two versions. The thick one uses only the egg yolks; it is so syrupy that you eat it with a small spoon. The thin one uses the whole egg, which makes the liqueur pourable and lighter in colour. Filliers spells its advokaat the Flemish way and supplies the thick kind, in a preserving jar rather than a bottle.
According to the producer, the advokaat is made from fresh eggs, whole milk, sugar and alcohol, enriched with natural flavourings, and gets its thickness from being prepared au bain-marie. The label states 14 per cent alcohol.

Six generations on the Leie
- The distillery in brief
- 1880Kamiel Filliers is granted a licence to distil jenever on his farm.
- 1928Firmin Filliers writes the first Belgian gin recipe.
- 1970The advokaat comes onto the market, made to Julia Denecker's recipe.
- 1975The farming side is wound down; jenever production goes up.
Graanstokerij Filliers is located in Bachte-Maria-Leerne, a sub-municipality of Deinze in East Flanders. The company was founded around 1880 by Kamiel Filliers, who obtained a licence to distil jenever on his farm. This allowed him to turn his own grain into jenever in winter.
Between the wars, Firmin Filliers took over as the third generation. The gin recipe of 1928 is his. Until 1975 the company remained a true farm distillery: what was left over from distilling went to the animals as feed, and the manure went back onto the land.
The advokaat arrived in 1970, made to the recipe of Julia Denecker, the wife of the late Firmin Filliers. Later came the fruit-flavoured jenevers and the cream jenevers. Since 2018 the company has been run by Bernard Cnudde.

The large jar or the two small ones?
It is the same advokaat; only the packaging differs. The 70 centilitre preserving jar is the standard size. The two 10 centilitre jars are sold as a duo and together hold 20 centilitres.
