Not a drink, but a flavour base
Monin is on the alcohol-free shelf, but it is not a drink that you pour. It is syrup: a concentrated flavour base that you dose by the dash. A bartender uses it to finish a cocktail or mocktail, a coffee shop to flavour a latte, and in the kitchen it goes into a dessert or a sauce.
That also explains why the bottle lasts a long time. For the speculoos syrup, Monin itself mentions a ratio of one part syrup to eight parts water, cocktail or other use. For a glass of just under two deciliters, that comes to a little over two centiliters of syrup, and you get around thirty-five glasses from a 70 centiliter bottle.
We stock three: the Bitter, the Lime Juice Cordial and the Speculoos. All three are 70 centilitres and all three are from France.

Three generations of syrup from Bourges
- The house in four facts
- 1912Georges Monin starts the company in Bourges, in the middle of France.
- 1945Paul Monin takes over management.
- 1992Olivier Monin takes over the management, the third generation.
- 150+Countries in which the house sells its syrups.
Monin started in 1912 in Bourges, and is still based there. Georges Monin began with flavoured drinks and syrups; his son Paul took over in 1945 and his son Olivier in 1992. Three generations, in the same trade.
What was once a regional house is now on the shelf in more than one hundred and fifty countries. Besides syrup, Monin also makes sauces, concentrates and liqueurs.
The three bottles we stock belong to the non-alcoholic part. The Bitter is the odd one out: not a sweet flavouring syrup but a bitter concentrate, intended to balance the sweetness in a mixed drink.
For the speculoos syrup, Monin recommends one part syrup to eight parts of water, cocktail or whatever else you are making.
What do you use syrup for?
Syrup is a concentrated flavour base. You do not serve it as a drink, but add it by the dash to something else. In practice it comes back in four places.
- In coffee and hot drinks. A splash in a latte, cappuccino or hot chocolate. Monin lists this as the first use of the speculoos syrup.
- In mocktails and cocktails. The syrup brings the flavour, the sparkling water or juice the length. The Lime Juice Cordial is made for this.
- In soft drinks and lemonade. Dilute with water or sparkling water, with ice.
- In the kitchen. In a dessert, a sauce or pastry.
How much per glass? For the speculoos syrup, Monin specifies one part syrup to eight parts. In a glass of just under two decilitres, that is a good two centilitres, which means about thirty-five glasses from a 70 centilitre bottle. For the other two bottles there is no fixed ratio on the label; there you dose to taste.
