Why this works together

Gekozen op de bierstijl (ipa en pale ale), het alcoholpercentage (5%) en de tonen van citrus, tropisch en bitter in de omschrijving. Bitterheid schraapt vet weg en zet zich schrap tegen pit. Wel oppassen: naast iets heel zoets wordt een IPA harder in plaats van frisser.

Serve at 6 to 8 °C.

Ingredients

  • 500 grams of fresh white fish
  • 4 limes
  • 1 red onion
  • 1 red chilli
  • 1 bunch of coriander
  • 1 avocado
  • sea salt

Method

  1. Cut the very fresh fish into cubes of about 1.5 cm and keep it cold.
  2. Squeeze the limes, cut the red onion into thin half rings and finely chop the red chilli.
  3. Mix the fish with lime juice, onion, chilli and sea salt and chill for 10 to 15 minutes, until the fish turns white.
  4. Dice the avocado and roughly chop the coriander.
  5. Gently fold in the avocado and coriander and serve cold straight away.

  • 160 grams mature cheddar

Method

  1. Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
  2. Only cut or break the cheese just before serving.

Ingredients

  • 200 grams of tortilla chips
  • 2 avocados
  • 1 lime
  • 1 tomato
  • 1 red onion

Method

  1. Cut the red onion and the tomato into small cubes.
  2. Mash the flesh of the avocados with the juice of the lime and a pinch of salt.
  3. Stir in the onion and the tomato and season with pepper.
  4. Serve the guacamole straight away in a bowl with the tortilla chips alongside.
