About this bottle

Brugse Zot Blond is a golden-blond Belgian specialty beer of 6% vol from Brugge, here in the large 75 cl bottle. Brouwerij De Halve Maan brews it with four types of malt and two aromatic hop varieties, and lets the beer referment in the bottle. That refermentation gives it a longer natural shelf life. The blond is the original beer of the Brugse Zot brand, later joined by a dubbel, among others.

De Halve Maan stands on the Walplein in the historic centre of Brugge, a place where beer has been brewed for more than five centuries. In 2016 the brewery laid a 3.3 kilometre underground beer pipeline from the Walplein to the bottling plant on the Waggelwater business park outside the centre. The pipeline was partly funded through crowdfunding.

Brugse Zot Blond is a golden-blond beer with a rich head and a fruity, spicy aroma. The beer is brewed with four different types of malt and two aromatic hop varieties that give it a unique flavour. The taste leans towards a certain bitterness. Citrus notes can also be found in its complex character. Brugse Zot is a natural beer, made from a selection of only the finest ingredients. Refermentation in the bottle also gives the beer a longer natural shelf life.

Main courseCod with mustard sauce and leek

Ingredients

600 grams of cod fillet
2 leeks
200 millilitres of cooking cream
2 tablespoons of coarse mustard
30 grams butter
800 grams potatoes
salt and pepper

Method

Peel the potatoes and boil them in salted water for about 20 minutes until tender.
Cut the leek into rings, wash them well and gently braise them for 5 minutes in half of the butter.
Fry the salted and peppered cod in the rest of the butter for 3 to 4 minutes per side, until it just flakes apart.
Gently heat the cooking cream with the mustard and season with salt and pepper.
Serve the cod on the leek, with the mustard sauce and the potatoes.

Method

Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
Only cut or break the cheese just before serving.

8 shrimp croquettes
1 lemon

Method

Heat the frying oil to 175 °C.
Fry the croquettes in small batches for 4 to 5 minutes until golden brown and hot inside.
Drain on kitchen paper and serve with lemon wedges.
