About this bottle

Chimay 150 Sterk Blond Groen is a strong blond trappist beer of 10% vol from the abbey of Notre-Dame de Scourmont. It was brewed in a limited edition in 2012 to celebrate the brewery's 150th anniversary. It was so well received that the beer with the green label became a permanent part of the range in 2021. That gave the series a second strong blond beer alongside the tripel.

The abbey is in Forges, close to the small town of Chimay in the south of the Belgian province of Hainaut, not far from the French border. The brewing water comes from a well inside the monastery walls, so the beers are always made with the same water of their own. To preserve the peace of monastic life, the beers are not bottled in the abbey itself but in Baileux, a village between the abbey and the town of Chimay.

Chimay 150 is a strong blond beer that is not only fresh and fruity, but also flavourful and powerful. The aromas of mint, bergamot, lime and eucalyptus take you on a surprising journey. The delicate flavours of rosemary and clove go wonderfully with the subtle floral touches, complemented by a hint of invigorating ginger. The taste is full-bodied and smooth, with a smoky and spicy flavour for the recognisable Chimay character, ending in a deliciously refined finish.

Ingredients

1.5 kilos of chicken, whole or in pieces
2 lemons
1 bunch of thyme
6 cloves of garlic
4 tablespoons of olive oil
800 grams of baby potatoes
salt and pepper

Method

Preheat the oven to 200 °C.
Rub the chicken with olive oil, salt and pepper and place it in a large ovenproof dish.
Arrange the halved baby potatoes, the halved lemons, the unpeeled garlic cloves and the thyme around the chicken.
Roast chicken pieces for about 45 minutes and a whole chicken for 70 to 80 minutes, until the juices at the thigh run clear.
Let the chicken rest for 10 minutes and squeeze the roasted lemon over it.

Method

Take the cheese out of the fridge about an hour before serving; that brings out the flavour best.
Only cut or break the cheese just before serving.

8 shrimp croquettes
1 lemon

Method

Heat the frying oil to 175 °C.
Fry the croquettes in small batches for 4 to 5 minutes until golden brown and hot inside.
Drain on kitchen paper and serve with lemon wedges.
