What do fine, vieux and XO mean on a bottle of calvados?

On a bottle of calvados, the age statement always refers to the youngest component. The IDAC uses four classes: VS, trois étoiles or trois pommes from 2 years, vieux or réserve from 3 years, VO, VSOP or vieille réserve from 4 years, and XO, hors d’âge, extra or napoléon from 6 years. Every AOC calvados spends at least 2 years on oak.

How is the age on a bottle of calvados counted?

The age on a bottle of calvados refers to the youngest component of the blend.

A twenty-year-old calvados may therefore contain older eaux-de-vie, but none that is younger than twenty years. The IDAC calls that counting the compte d’âge.

The same rule is in article 13 of Regulation (EU) 2019/787: a maturation period or age may only be stated if it refers to the youngest alcoholic component. The count starts on 1 July following the distillation.

What does vieux mean on a bottle of calvados?

Vieux and réserve stand for at least three years in oak for the youngest component in the bottle.

It is the second of the four classes named by the IDAC. Below it is VS, also written as trois étoiles or trois pommes, with at least two years.

The mention is not mandatory. A producer may leave it out or put an age in years or a vintage in its place, as long as the prescribed form is observed.

What does XO mean on a bottle of calvados?

XO stands for at least six years in oak for the youngest component, just like hors d’âge, extra, napoléon, très vieille réserve and très vieux.

It is the highest of the four classes named by the IDAC, and there is no upper limit. XO covers both a calvados of exactly six years and one of thirty years.

If you want to know more precisely, check whether there is also an age in years or a vintage year on the bottle. That says more than the class alone.

What does fine mean on a bottle of calvados?

Fine is not on the list of age statements that the IDAC gives for calvados; that list has four classes, from VS to XO.

What is fixed is the minimum from the AOC decree. Every calvados must mature for at least two years in casks of pedunculate or sessile oak, counted from 1 July following distillation.

If fine appears on a label, look at the rest of the label. An age in years, a vintage or one of the four classes tells what is established about the maturation.

How long must a calvados mature at minimum?

Every calvados with the AOC must lie at least two years in oak casks, counted from 1 July after the distillation.

The decree also prescribes an alcohol content of at least 40 percent at sale. For AOC Calvados Domfrontais a longer minimum maturation applies: at least three years on oak.

Above that minimum, the producer decides how long the calvados is left to age. The class on the label then tells you where the youngest component in that range stands.

The letters are the same, but each appellation sets its own minimum periods. For calvados the IDAC applies at least four years for VO, VSOP and vieille réserve.
What does a year on a bottle of calvados mean?
That is the harvest year. The IDAC recommends also stating the bottling year, because maturation stops as soon as the calvados is in glass.
Does older also mean better?
More years on wood give more wood influence. Whether that suits you is a matter of taste; feel free to drop by in Bathmen to compare.
What is the difference between the three calvados appellations?
